For achievement random bounties don't count. It must be those specific "pre-made" ones with "special" enemies. I think you can see in progression what's missing.

Honestly heroic is a way to hard for me, hard is ok, but challenging is a bit to demanding in some cases

That will change as your skill increases. I had trouble with Challenging at first. Got some decent builds and learned how to use them. In the process I learned how to play the game better. Now I can go into Heroic without trouble, I just prefer to grind at Challenging.

Of course the key thing to remember is to have fun!

Yes it's bugged. No solid way to open it that I know of. The theory is that it thinks your Specialization is an exotic. You can't unequip your specialization.
