The difference between having a deflect ability and not is usually the difference between a successful run and a failed one.

you just need to get a certain chain of boons on a given god

If we were going to get one more god boon, I would guess it would be either Apollo, Hephaestus, or HermesApollo or Hermes would likely be more flashy and I could see them fitting better in Hades, Hephaestus would likely feel similar to Daedalus Hammers (same kind of "tinkering" feel to them i guess)

The nice thing is that both control schemes are perfectly viable, as long as you're comfortable with them. You don't really lose out by using one over the other. The one exception I would note is that there are some aspects of combat (particularly the Adamant Rail special) were mouse has a distinct advantage. That's only part of one weapon, and there are currently 5 weapons, so not something to make or break the gameplay
And Dio cast, I guess, for the same reason as AR special

Adamant Rail special and Dionysus cast both are an aimed AoE attack. With the mouse, you can just point and click on the screen where you want it to land, while with the controller you have to move the location with the stick
On the flip side, controller benefits more from aim assist than mouse
So there's a trade-off

I'm not sure exactly what you're asking. If you select "Give Up" then you start the next run with the same seed, more or less, as the run you gave up on. If you select "Quit" it saves your progress in the current run

Give Up and Quit occupy the same spot in the menu, but Give Up is only available after you've taken damage but before you finish the combat
Quit is available after you clear the Encounter and before you take damage at the start
