TL;DR Preserves Jar prefers vegetables and fish roe.
You should process veges through this for quicker cash as it has a way quicker processing time along with slightly lesser multiplier.

While Kegs prefers high-value fruit or vegetables.
As a cost for it having a higher processing time, it also has a higher multiplier. This is especially apparent for fruit with a multiplier of x3 (as compared to preserves jar of x2).

Notable exceptions is Hops, Wheat, Honey, and Coffee Beans which are exceptional to process through Kegs.

I planned on buying more fertilizer when i get the first harvest. Does the fertilizer still work? And would yaall recommend to do that? Or should i just leave it like that?

A lot of new players often feel like they don't have time to do thing because of how time works, and how you're forced to sleep every night. But long term, the game doesn't actually have time limits. The game doesn't care how long it takes you to finish things. The only 'punishment' for missing something is that you'll have to do it next year.

its not noticeable for the most part, only when mining it really affects your chance of finding ladders
