Standard is definitely most powerful just from its real estate advantage
The problem is, it's kinda boring to look at, and aesthetics have value when you do have to look at the farm every day. If you think that might bother you, maybe try one of the other farms instead.

Beach has absolute loads of real estate, but sprinklers (incredibly useful) do not work on most of its soil, limiting your options for it
Wilderness has more real estate than most, though at a significant enough disadvantage at it compared to Standard/Beach/4Corners to be noticeable

Monster farm, even with monsters toggled on, isn't... really a challenge so much as it is a hassle

Equip fishing pole, face the water
click and hold the button to wind up your cast. Release the button to throw the bobber towards the water. The farther you can get it away from the nearest walkable terrain, the better.
Wait for a bite (it can take a while without bait, and you can't equip bait on the first fishing pole)
When you hear the tugging on the line (plus your farmer suddenly yanking the pole back), click the button to set the hook (pierce the hook through the fish's mouth), and then the minigame begins. (Or you might just have hooked a trash item, in which case you instantly catch it without the minigame)

The thing to know is that you are not just raising the fishing bar when you press the button.
You are accelerating it upwards.

You don't want to hold the button, or it will gain too much upward speed.
You don't want to rapidly tap the button, or it will gain too little upward speed.
