It isn't missing anything, far as I can tell. Forage area, the cave addon, river full of fish, quarry. An extra lot and massive shed for wine. Only things I've been disappointed with is the minecart won't go straight to the mines or work with Minecart Patcher, but I can just go to town first then wherever. And I can't put a coop/barn in the vineyard area, I'd've liked to use the prebuilt fence area for that, but that's not the mod's fault.

you can choose to use them or not, stardew endgame is fairly relaxed compared to most games

Most reliable way is from ||skull caverns||. Iridium nodes have a 4% chance to drop one. You might also come across one while opening omni geodes or farming monsters in the mines(i recommend farming dust sprites anyways for burglar's ring) but neither are as consistent
