Speed Gro isn’t great since it only affects the first growth and not any of the Regrowth
So the Retaining Soils are really the only ones kinda worth for using sprinkler space for more crops

Actually, they can, but only one will grow to full size. I sometimes plant a few full rows and just cut them down and replant as they hit full size. Though if your goal is a tapper farm or something along those lines, then yeah, leave a space.

Not necessarily. Common mushrooms also spawn in spring in the secret woods. Also, on saturdays, the ||desert trader|| will trade 2 winter seeds for 2 fall seeds, so if you have access to the desert and the greenhouse, you can plant the fall seeds in there to get a mushroom

They take 28 days to grow their first fruit and every 7 days after that

They grow in all seasons except winter

Also, you should probably plant them at the first day of either Spring or Summer to grow. But it's best if you plant it during the former season so that it can blossom fruits during the following seasons.

Only thing that survives winter is fiber and winter wild seeds

I thought it will be dormant, since the crops are the ones that die once they're out of season.

If they just "die", that would be tedious to replant them every time. And trees aren't suppose to do that, not even irl when they're not in season.

They just lose the leaves and lose the ability to bear fruit. Have to wait it out the next season when they blossom again.

None of the regrowable crops like blueberries and cranberries work like that. They all die when they're out of season instead of just surviving without bearing fruit.

Which is why places like the greenhouse is the best for ancient fruit where the season doesn't matter
