The steam achievement only updates when it registers that you've read all the pages leading up to your "current" page, but the game remembers which ones you've read if you do so out of order. So if you read pages 1 and 4, steam will say 1/8 until you read 2 and 3, then it'll jump to 4.
tl;dr - Don't stress about the steam achievement, it'll update.

To answer this specifically, to get the later pages you gatta open the scroll in the later areas. You can carry an unopened scroll to a different region to get those pages if you need to.

How about a mirror mode esque ascent. It starts you at the Peak and you have to climb to the top of the shore. Basically the map for the day but flipped upside down

The only ascent modififer I am terrified of is cold nights
