You can set them that way in the summoning staff. When you select them to summon you can set their wander range to 0 and they'll stay put like they used to

Yeah, if you time a block just right you'll parry their attacks and build up their stun meter. The green ones fill up pretty fast. Most of the attacks even have a little flash to let you know it's coming xD

The best way to practice is to go into that first low level shroud, under the bridge by the starting base area and just let some low level fell wail on you while you work out the timings

I find the mechanics for back stab and stuff a little looser on this than on other games to be honest

The sneak isn't amazing either. I'm running a semi stealth archery / distance dps build and it's not great for it but it works as long as you're careful. Finding vantage points and dropping and stuff is fun too

Try low level enemies, maybe make yourself a small route round the low level Shroud and practice there for a while and see if you can work around the quirks of the mechanics?

Some grapple points have a real hard time showing up, unless you're standing in a certain angle. I've found double jumping at a ~45 degrees angle in front of them works best normally

Do you have updraft? Otherwise you could try and cheese it.
You can jump away from it, activate updraft, cancel your glider and turn 180 degrees, reactivate your glider quickly again -> you'll get the boost that was left from going forward, while going backwards. You might be able to reach it that way

You could try to updraft "against" the wall. Cancelling your glider right after activating the updraft, to then reactive it again. You get a glitchy uplift from the game sometimes. Maybe that, while spamming E real hard

Perhaps you can cover the stones with things such as foliage or moss, RawX. However, I believe simple dirt will always keep showing the pebbles that were previously there. I didn't manage to get rid of them at least, without changing the entire material

Also tested to see if it was "rubble" nearby that causes it (I built a sky box) and that also has rocks in the grass.
I suspect it's a procedural "Server texture grid" thing and that there's nothing that can be done, but a dev would have to comment on that I guess.

The necromancer build is that dead, we've yet to find a way to resummon it from the dead.
But honestly, I think in the Hollow Halls there's a better tool for disposable skeletons you might like. But there's not yet a build actually to make it feel like a class with an pet/army at all.

It's non-toxic in terms of skin contact and stuff, it's not like mercury, but it would definitely become toxic if you started ingesting a fair bit of it, so I'd be careful with really small kids. In general though yeah it's pretty much the safest way you can play with a liquid metal
