You just create a new folder outside of program files. That’s where you direct the mod pack. every mod pack comes with a guide that goes step by step through the wabbajack process. As long as you have nexus premium it’s completely streamlined and automatically downloads and installs the entire thing. You literally just have to put the install path at the start. If you don’t have premium it’ll give you links to every mod you need and you just do it that way, but it’s still done through wabbajack and much easier than manually searching for each mod

Really depends what you’re looking for, each mod pack is unique. Lorerim sticks to the lore as much as possible while adding a lot. Nolvus changes the game a lot but it’s fuckin huge, like 400GB
