Skeletons swing their sword in a specific way (i think its mostly up to down), you dont block at their face, rather where the sword will land (for example, up when the enemy does an overhead swing etc.

As rogue it's pretty easy -- avoid fights and use the map to your advantage, pick people off and sneak up on them. As cleric it's been harder, but I've had decent luck with the drunken monk build, focusing on pve but picking fights when I have to. Invisibility pots work great if you're not a rogue.

It happens sometimes, but a lot of times you can hear them coming and crouch walk to sneak around. Also, rogue is the fastest class with default gear, so just blaze through rooms and let the mobs kill them. You can deaggro with Invisibility. Pick up the Creep perk if you wanna be extra quiet. But yeah, invisibility jukes are definitely your friend. The first perk I pick up is the one that let's you walk 10 steps while invisible.

yes, blocking is based on the hit touching your shield

You just have to get the sword to collide with your shield, the shields hitbox is pretty accurate so yes it does. Blocking forward doesnt always block the hit.
