Roadmap got removed before I had a look at it. Was end last year. It's complicated issue and tons of people have each their own interpretation.
Long explanation:

By the opinion of some, the roadmap served no purpose really, was rarely updated and and so it was pretty much useless to begin with.
Then exfillzone launched with many features from the roadmap.
Scott is adamant that EZ stole stuff from roadmap so more likely main reason why it was removed.
Even if they did not steal anything, because both games are essentially just copying Tarkov, fact is that EZ communnity is pretty fucking shit and keep coming to Tabor community with toxic shit about how Tabor is now adding EZ features, despite Tabor having that on the roadmap long before EZ existed. So overall it's net negative to have that roadmap public (thanks, toxic shits from EZ)

I personally think that Scott's belief is kinda a dumb argument so I go with the latter explanation.

About the last part, there is no list of current bug/known issues let alone priorities.
This is a the shitty part about GoT development we just have to accept and expect because no the studio is too small and management not equipped to deal with it in a community this large.
They have their own internal priorities they have set based on the development goals they have and many small issues, that don't affect many players and/or bring no losses, are being ignored and will only get looked at when someone internally gets annoyed with it. From what I can gather, seems that devs that do play the game themselves, have certain way to play and, if an issue arises with that, then it gets fixed. Other than that, only widespread community outcry is what pushes the buttons. Maybe if someone with chad role is vocal enough too.
zstorm is doing his own agenda and trying to showcase some small bugs to community, which can help prioritize some issues when exposed publicly, but that's about all the known issues we actually get.

Other than that, the communication part about issues and bugs is really bad. When I came on, their main way of communication was tiktok videos and if someone was posed on tiktok, they considered it done. Lately they have been getting better with some more discord announcements, patches and such, but there is still a lot they need to learn about community management honestly.

That is unfortunate. Communication is so critical with communities, especially when it involves investments/purchases and game breaking bugs that may or may not even be noticed; no one knows. Obviously in the case that I've been bitching about for the last few days (PVE Quads), we're seeing some traction on it finally; albeit extremely slow from my perspective.

I guess I'll just have to continue being loud, annoying, but as respectful as possible (within the guidelines of the rules) about my grievances until it is addressed. I get it being a small studio, and I got mad respect for them and what they've accomplished, but it's really sad that such critical issues for players, aren't considered critical to them. Fairly certain that they should suspend sales of the Team Tactics DLC until this issue is resolved. Purchasing something with a 25% chance of not working, is against Steam's Developer ToS last I checked.

Because quest was made for day 1 wipe scavs that had a ton of bizons and sks, but scav weapons got nerfed. Anyway, the 2 at graveyard and 2 at bridge exfil have highest chance to drop a bizon, the one inside church, if he is patrolling (not standing) also has a low chance to drop bizon. Just run circles between them till they drop.

Going back to AMA, they need to work on armor optimisation that prevents them from adding more players on a map. That should be coming together with the island expansion so that they can boost the player numbers on the bigger map as well.
Aside from that, the weather effects and all that. Then after island comes Matka Miest expansion, meawhile bunker I am pretty sure is being reworked in some capacity as well. There is a lot. But their first priority, as suggested by all the leaks and the Jiri's questline ending and other hints, is Island expansion right now and it would make sense that everything else, including the wipe dates, is adjusted for that 🤔
