Alternatively make caramel by boiling the can of sweet condensed milk and AFTER ITS COOL then add it. Totally changes the flavor. Takes hours to boil though.

It's a very tender and low-fat meat. It has a stronger taste than pork or beef, but not as strong as boar or deer meat. If you cook it correctly you can taste a bit of blood too. Overcooked horse meat becomes dry and tough to chew. It's very good IMHO, it is a typical food in Catania but you can find it in other places in Sicily too

I feel like that’s pretty common in “higher end” steakhouses. They really should have a regular sharpening service for their knives if they’re not going to either pre-slice the steaks or give the customer a serrated steak knife.
I can’t say I’m a huge fan of the black slate as a serving surface, either.

It was a stupid and overly complicated project to do for a random dare with some internet strangers but it was slow at my food truck today and I had nothing better to do.
And now I’ve learned that I am my own meat grinder if I don’t let my dreams be dreams.

Anyone can learn to cook with the right tools. A lot of talented cooks I know are entirely self-taught. Chashu is fairly simple. Especially because I’m not bothering to roll it.
I’ve worked in petty much every type of restaurant from little greasy spoon types to internationally renowned ultra fine dining type joints. My usual advice for people trying to cook like restaurants at home are: double the amount of fat you use, double the amount of salt you use, and make your own stocks/sauces. Other than that it’s mostly temperature control, timing, technique, and specialty equipment.

Try using chicken thigh. It holds up much better to braising due to its higher fat and coligen content.

Nah, can be juicy af. Sear one side for a couple of mins, flip and put the pan in the oven for ~15 mins (use thermometer)

Yes and no. If you’re roasting a piece of chicken or what-have-you, you can inject brine which will help the meat retain moisture but for braising, stewing, or any low and slow cooking method, when the meat tastes “dry” it’s all the fat and collagen melting out. For low n slow cooking methods, your best bet is to use the correct cut of meat.
Pork belly is also super high in connective tissue. That’s the real secret sauce.
Other examples of excellent braising cuts are brisket, chuck, and ribs

The only good cuts of chicken for “low and slow” cooking methods are thighs, legs, and wings. The dark meat. Chickens these days are mostly breast thanks to breeding messed up chickens to meet high demand.
Breast can be an excellent cut if it’s grilled/seared but I’d avoid stewing/braising it.

You can try poaching the breast. It’s a gentler cooking method so it will do a better job retaining moisture.

I am annoyed, a photo of a bombass sandwich I made the other day is lost to oblivion. I meant to post it here but the previous phone nuked itself.
The sandwich in question was ciabatta, kewpie mayo, fermented pickles, juniper berry and elk salami, tomato slices (lightly salted and peppered), pastrami, and hot capocollo.

Dumplings made with cow heart, pumpkin, and onions, with added soy sauce

It honestly tasted like beef but slightly tougher MAYBE
I'll tell you one thing, they're (the dumplings) delicious.
Same meat mix was used to make lil meat pies and baked in the oven
I'd eat 10 I could.
Basic but solid, some chilli sauce to dip and it was perfect
I've had hearts a few times, they are kinda chewy. But very rich flavour.

Chicken fat is great for frying. It has a relatively high smoke point and a nice flavor. Just gotta make sure it’s properly clarified to avoid having burnt bits in there.

It's like shawarma, but it's a thicker flatbread and it's less salad and more meat and they put fries in it, you can turn it around and use the flatbread as an edible plate
