Some MMORPGs have swappable bags that store specific items, but I'm not certain if that's the best route.

Yeah, but why not do the same thing but with players? Another MMO had the exact thing you're describing where people would put out a request where they pay stamina (the game had that system, I know, yuck) and an appropriate amount of money for someone to, like, smelt some ores or craft materials into something because they didn't have the time or skill to do it.
