I think it's because you're going to typically want to balance on your strongest leg and more people are right hand dominant in turn are right leg dominant making that leg the one that more often naturally feels better

We aren't on waves that face a specific way on a break so we have more freedom of choice of being comfortable skating

The more you do something the more comfortable you will be with it. We forget that we had to train to be "handed" in the first place by writing the same letters over and over again to form those neuron pathways and make them strong.

Learning to push/ride switch feels uncomfortable so that's where most stop trying and stick to what's comfortable, but with repetition and practice it becomes easier and easier.
