Illuvials are all on their own bonding curve which means that the more they are caught, the harder it gets to capture new copies. But they will stay available for capturing. Only when a new sets comes out will they go "extinct" and even that is something where Kieran and Aaron are considering a proposal to have a finite "last batch" of each Illuvial with very low drop rates remain in the wild after a new set hits.
