I think it was argued that having too many fights with only common illuvials would make the game too boring. The majority of fights would just be filled with Tier 1 or stage 1.

Lore-wise the Ethereals might not have enough dimensional stability to be caught, but enough to fight you.

I get the idea, but I'm not sure how popular/fun it'll be in practice

The choice of weapon depends on what team you have and which illuvial you bond with.
Rangers weapon always gives one Affinity and one Class,
Bond with an illuvial and the ranger takes on the dominant Class/Affinity of the illuvial
Bond + Weapon will give the ranger a composite class and affinity, which will give a bonus to your team if you have Illuvials sharing that same composite

That depends on what composites you want on your team.
Say you're using a Titanor as tank (Granite/Colossus).
If you bond your ranger with it your ranger takes on the dominant class/affinity, which is Earth/Bulwark.
If you then add an Earth Shield, the ranger becomes Granite/Colossus as well, activating both bonuses.

However, taking a Fire sword, the ranger becomes Magma/Behemoth, which goes well with Sear, Jotun or Scoriox. So it depends a lot on what your full team looks like as well.

It's a way to make encounter interesting/harder without flooding the market with high tier/stage Illuvials. They came up with encounter mods before. But without ethereals you always fight the same boring stage 1s everytime. With ethereals they are able to create real encounter where it will become difficult because of enemy synergies of affinity/class. Not only using flat encounter mods and increase Illuvial number to infinity.
So it is possible to balance exp, economy and difficulty without giving everyone free T5S3 Illuvials.
It also enables the chance to bring more illuvials into the OW because you can't catch 10+ in every encounter. So the OW feels less empty.
You will also find and chase more higher tier/stage Illuvials in the OW which makes it more exciting seeing them run around.

You can also somewhat influence a Illuvial fusion. Stats are completely random. But when you fuse any stat from the 3 Illuvials will be taken for the higher one. This means if you have for example a tank Illuvial and fuse 3 lesser with max defense on all 3 of them you guarantee a max defense stat on the higher one

the basics are not that hard (on this topic). You hunt, you find many stage 1, then you see that you fuse 3 to get a better one. That's it. You also see in the fusing menu the possible stats of the Illuvial. And all the advanced stuff doesn't matter that much because that is a whales game. You cannot find good Illuvials easy and when you want to max it then it will get expensive.
Illuvial stats only really matter in the Leviathan arena. Which is also a whales playground. In the normal arena stats are the same for everyone.

it has nothing todo with the game. eth testnet is an infrastructure where everyone can build it's stuff. You can get testnet eth for that in many faucets. Illuvium probably just uses a faucet too

You could. But there’s not an easy filter for that. You would have to look at all the illuvials. So for example I filtered by ophistos and then check each one’s capture number (0 means they were fused) and then activity (there you can see the mint date)

The chances of capture are too low. Creating a shard is very expensive, and the probability that you won't capture anything is too high. Maybe I have launched about 10 epic shards without capturing anything, when the game comes out there are people who are going to lose a lot of money because of this, and either they are going to get angry and quit, or they simply won't be able to continue because having Having lost so much money on useless trips and shards that are of no use, they will not be able to continue playing. Right now it looks more like a casino than anything else, and I've always had very bad luck.
