Tips for taming an equus: If possible pick it up with a flyer, drop it into a 3x3 trap made with doorways, wear ghilli, sneak up give carrot, give another carrot and watch the icon in the lower right corner, when it lights up feed another carrot. Put carrots in the 0 slot on the hotbar. Also helps if you can use cactus broth to help you sneak up to it.

theyre passive tameable using 1 veggie cake on 1x and max level, so just tame it rather than dropping it in a trap. saves you a lot of time of realizing that your sheep is a megaloceros

scorpions and arthros have completely different uses though.

That all depends on rates, and level of it. I think venom give 400 food points and they lose 1 food point per 11sec (if there food level is not high enough the venom will give less then 400)
