The reason I parboil rice is because it's actually better for your long-term health if you happen to eat a lot of rice (every other day or more). Rice is generally grown in water, and this has the upside of keeping pests away from it but the downside of making it vulnerable to absorbing anything that happens to be in the water. Arsenic used to be an ingredient in fertilizer in the US. Arsenic dissolves in water.
Parboiling removes arsenic while keeping (mostly) intact much of the enrichment nutrients added to rice. Just don't drink the parboil water
