Technically they can fine tune exactly how things behave, so it won't even be that it all matches what one hz setting feels like
For instance you could have walls behave like 60hz
But ice still behaves like 120hz
Uncoupling the physics from the Hz opens a LOT of possibilities

Of course they will want the game to still feel similar to the most amount of people, so I'd assume they'd go for what quest 2 default currently feels like for the most part
