The way I see it

You finish your degree, start work

You don't need a new pc yet, cos it was already tailored

Gives you potentially more years to save up for something better

You're not giving up like 20% fps going team green lol

On the other hand going ryzen over intel, you are giving up a lot of multicore

In the realm of almost halving it for maybe 5-10% more fps

In exchange you also use a lot less power tho

As far as your workstation impact, this would be a noticeable difference, however you lose the ability to upgrade with the mobo, something that AM5 gives

So the choice would be your call there, both are competent, really all are competent, but the more you cater to workstation imo the better off you'll be later

Especially when you go into later subjects in your degree that ask for wfh projects

Or late night work in your first apprentice job or contract

The newer ones have come leaps and bounds

A number of them adopt something new which is vapour chamber tech

Greatly increases the cooling power in the same space

They've gotten better, they can still be a bit loud, but I do think it's a solid step better

You might need to manually set the M.2 slot to PCIe 3.0 mode because your CPU and the drive don't support 4.0, but the motherboard does. That can confuse it sometimes.
