Basically you can trade items with people all over the world. There are big discord servers where you can look for specific items, villagers or inspiration.
You can make a lot money with turnips, cause the odds of finding a good price are way higher.
You can help each other with picking weeds, go fishing on other islands and this stuff.
Also there are some achievements you can only get by visiting others
Idk if your girlfriend is into designing her island, but if she’s looking for specific flowers she could also get them online

Long story short, I refunded the game after about 30ish minutes

If you want the explanation: the UI is extremely messy. I click on one thing, and now there's 15 things to click on, and it also doesn't help that there's about 50 images of furniture, animals, currency, and whatever all plastered around. Not to mention they took the lazy route and decided to add basically 4 battle passes into the game because it's now fully microtransaction free.

Oh and I also made a New Game to avoid the flood of years worth of new content that I missed out on, and to have it slowly be introduced to me one at a time, but that doesn't happen, no the second you are out of the tutorial, everything gets tossed at your face all at once, and it becomes super overwhelming. Very not new player friendly.

A good question is though , I haven’t picked up the game in awhile though since I have a 5 star complete island , What are people doing after they finish the community is still so active but I only pick it up here and there to change a few things because I don’t want to reset

I loved sharing a town with my sister in Wild World and City Folk but that was when all players had equal footing. Having one 'main' player just doesn't feel the same. I hope we get an option to have multiple players in the same save but in a more colaborative way.

after a while I transferred my island to my bf's switch (he has the game but doesn't play it) and started fresh. It just doesn't have as much long-term playability as the other games for me, especially New Leaf

I don't think they'd actually do this, but it could be cool for players to be a sort of 'town task force' and Isabelle could be the mayor. We all vote on things together and collaborate to build the town, but we don't have total control

but as I said I don't think they'd do it and I'm sure a lot of players wouldn't be happy with that

I just personally thought we got too much control in New Horizons
