You can fix that
Go in inventory then apparence mods equip the first backpack/chest then un-equip it
Go back to inventory then back in apparence mods and you can choose which one you want to pick

Yeah after a few wipes and having to start from scratch I just dropped it to challenging so I at least had checkpoints. Final boss still took a bunch of goes, was skill build in the end that worked (really didn't want to cheese it that way)
