you will find classic graphics better from a mechanical and environmental standpoint
you will find CE on new graphics more difficult because there is no visual cue for taking shield damage- only audio cue for shield being low and depleted
the new graphics also do a better job of environmental storytelling particularly on level The Flood
if i cant convince you to stay on old graphics, you should at least go back and forth to compare (it's as simple as tapping the tab key)

Projectiles and environment decals are harder to see with all increased visual noise,
There's model discrepancies since some are from Reach and others from H3
And the aforementioned terrain mapping inconsistencies.

FOV's definitely a preference thing, I'm prone to migraines so I prefer it wider
you can do whatever you want for fov, id only say it's "not appropriate" if it's set so high that you see parts of the viewmodels you shouldnt (like for example seeing floating arms, instead of the arms always reaching the edge of the screen)

Your time is your choice obviously, but I personally believe Acolyte is worth the push. It hits in a different way that is needed: finally delving into the Dark Side and the Republic's dysfunction in a relatable way.
