What do you do to season it? Are you a simple garlic and salt guy or do you prepare a marinade of some sort?

It depends on what the base will be. E.g. if I'm going to have it on veggies, I'll do a simple olive oil, salt, onion & herb seasoning mix. If I'm going to have it on rice, I'll do brown sugar, soy sauce, oil, and salt. That way it kind of goes with the base instead of fighting it.

One thing I always do though: dry it out via paper towel as much as possible. Get that fishy oil smell out of the equation.

Delightful, I've tried a few different ways but I've found that a classic pan seared with garlic and herbs and salt is my favorite on top of a rice, sometimes with a pinch of teriyaki but I love being able to just enjoy the flavor of the fish and the saltiness brings it out nicely

Indeed, the best sushi I've ever had was actually in Haiti about a decade ago now. man was it good. I remember it having crispy eel skin and the juiciest cooked crab. Definitely not the country you think of when you hear sushi but it was delightful
