It often comes down to build, depending on what you're going for. Strictly speaking damage wise, Aphrodite has the highest percentages for hard hitting weapons like sword, bow, shield, etc and Zeus is best for things like fists and gun

There are two upgrade systems to think about here. Hammers upgrade your weapon skills/numbers, God Boons upgrade and alter your skills and abilities. There's attack, cast, and special boons to consider. Theyre saying take this Gods attack, this Gods special, etc. etc.
When you see a Hammer symbol over a door, thats a weapon upgrade, from there you choose the option recommended to you (assuming RNG has blessed you)

When I was having trouble with Theseus, I would fight him the same every time. Wait til he throws his spear he has targeted at you, let it miss ( or deflect with Divine Shield) and dash towards him and attack while he turns away. Itll give you a solid 4-5 hits, do this over and over til he dead. It gets trickier in the second phase, but waiting for him to turn around after throwing his spear was key to me

Dash strike constantly, it charges much faster. You can pretty much ignore the special entirely, it doesn't help you too much. Go for safety over getting a hit in, it's ok to go slower while you learn the rythm and such of the bow
