Though in fairness I noticed recently that the scaling for mobs from Tartarus to Asphodel is a pretty big jump
If you were absolutely murdering any shades in Tartarus, even armoured, then find Asphodel mobs much tougher, that seems to be a normal occurence

That's not actually a thing. Some enemies cannot appear on your first couple runs or until you've reached a certain point in any one of your runs; but, every chamber has a fixed difficulty level, and every enemy has a difficulty value assigned to it, so the sum of enemies in a chamber can never exceed that level.
So the new enemy types would just replace other enemies in a chamber. That is, you'll see a bit more variety overall.
