The rule of thumb for what boons to pick boils down to
Weapon has high base dmg/on the slow end: go for gods that add a % to your attack (usually aphrodite or artemis)
If the weapon has weak base dmg/hits fast (rail/fists attack) go for a god that adds an extra dmg source to your weapon (zeus/Dionysus usually, Ares is a bit different)
For getting this stuff consistently you use the keepsakes that you get from gifting nectar to each god
They force the next boon you'll see to be that god
Then you look out for stuff that work together
For figuring out this part yourself you'll want to get the codex upgrade that gives you a boon list for each god
On top of being able to see what you can get it also includes what's needed for a boon to appear (duo/legendary boons for example)
If you want a more specific build to follow there's a site pinned in #h1-builds-and-combat
It also explains a few other mechanics which can help you experiment on your own (just mind some spoilers for hidden aspects/at least 1 post credits keepsake )

Haven't looked at it in a while but I think it mentions hunting blades (just mind that there'll be spoilers for the hidden aspects/some keepsakes)
But for hunting blades you really want to mainly look out for more casts/cast dmg from chaos
Charon's keepsake can be great in ely to buy anything there, buy the well before 4th biome then swap to a defensive keepsake
Hermes has hyper sprint + rush delivery for more dmg

That's just a rough estimate and I wouldn't base any impression on it. As long as you upgrade the mirror, unlock weapons and what comes with them, using keepsakes, the win will surely come.
If it's becoming a drag and taking away from the enjoyment on the game, I'd recommend enabling God Mode

if you want more "we ball" build you can start tidal dash (use the keepsakes from the gods to meet them chamber 1)
then go from there
if you find artemis you can then take ares cast for their duo

and zeus gets stronger the more zeus you add (namely static discharge)
if you want just the cast build you can start with the cast of your choice

Keep yourself and Theseus between a pillar to stop the spear throws and target the bull first.
The bull attacks are better dodged by dashing through them/sideways than away from him, you get more chances at dealing dmg back
For the rush in specific, wait at a wall/pillar and when he's about to hit you, dash through him, he should hit the obstacle. (You can use any call as they all grant iframes in activation if needed)

once the bull is gone you have 2 ways to deal with Theseus
Keep yourself between the pillar, wait for him to throw and hit him while he's retreating. (You can also just dash through the spear, the target on you gets brighter when about shoot.)
Or.
Stand next to him, a white circle is gonna appear when he's about to do a spin attack, dash through it and you'll have time to hit him.
Once Theseus resched half hp is your biggest chance for dmg, as during the phase change he drops the shield for a while. You can keep dashing back and forth to dodge and attack at the same time
If he isn't dead by the end of the phase change just go back to spear throw dodging/spin until he dies
Just mind the extra AoE now
(if you don't want a certain god helping him, taking a boon from them will remove them as an option for Theseus )

Normally is core + core (core being attack/special/cast/dash/call)
At some point in the work orders an upgrade for the codex should appear
It gives you a boon list for each god and it includes the pre requisites needed

Aw, that makes things harder then. I guess you could farm the first room, but keep in mind you'll need to actually die to get a new RNG seed: using the "Give Up" option just resets the run

Will there be different dialogue if I get my first clear with a lower total # of runs? Am on 12 runs right now, have made it as far as the final ||bosses|| of Elysium, and I'm worried farming quick runs and dying will mess up my save file

if anything it helps dying often so most dialogues can catch up
game pulls from a pool of dialogue each time and some have higher priority than others (see; main story stuff)
