Can confirm you don't need to talk to Hermes. Zag will just mention it to Charon at the end of the fight and the Prophecy will be completed. It simply seems to be bugged right now so the game doesn't track your victories against him properly. I had to beat him 3 times successively before it worked.

I think that to make the most of the egg, don’t start with it. Check the inter-region well for Light of Ixion before switching keepsakes, and take the egg if you were able to buy one. Running Fated Persuasion to reroll the wells improves the odds.
Make sure to carry enough money to buy more lights if the occasion presents itself.

its not really gone in depth in the game but it is mentioned but sisyphus cheated death. in some myths this involved tricking thanatos with the chains the god had come to bind him with, resulting in ares having to rescue thanatos because surprise! with death incarnate held captive, mortals can no longer die. anyway ingame thanatos remains bitter toward sisyphus because of what sisyphus has done to him while he was still mortal
so hes distrustful of sisyphus and doesnt trust his intent around zag, despite the fact sisyphus has had a very very long time in the afterlife to think over and assess his deeds as a mortal and mellow out considerably
