I had Chiron bow with Aphrodite special and legendary. Basically charmed him every time I used a special, but every time he got charmed, he would use the ghost charge attack. It was way more frequent than it was in a fight where he wasn't charmed.

Yeah selection bias is a thing. People who clear faster tend to post more online about their runs. Nothing wrong with that of course. The game is too fun not to share, but don't compare yourself to a skewered sample.

Yeah, that's fair. But usually when I go for a cast build, I'm intending a high investment build, anyways, so I don't mind leaving it up to fate on most runs.

You can't naturally find Heroic boons, though as far as I'm aware all boons can go up to Heroic (with a couple exceptions, mainly boons that give resources). Eurydice is one way to upgrade boons to Heroic, as is Demeter's Rare Crop, and exchanging boons
