Chiron is probably the safest aspect in the game for bosses. You don't need to know attack patterns or put yourself in a risky situation, just dash away and chip away at their health. My first 32 was a shackle Chiron run. Did it first try, and had been trying to 32 for a couple days.

I've beaten him many times with fists -- it's the easiest weapon for me with him because of how quickly I can dash away once he shows he is going to attack. What helped for me was removing the "I can damage sponge this" mindset out for him -- he doesn't stagger when you hit him (duh) but you might be relying on that with fists, which leads to you getting hit

to add on, you can see this especially in high level shield players. delayed dash strikes are used a lot here because the swipe animation of a shield dash strike 1) destroys projectiles in front of you, so it's kind of like additional invincibility and 2) you kinda slide a bit when you do it, so it actually saves time when traversing a room

when you get a boon/pom/hammer in a than encounter, those are called "menu than"s and are used to save in game time, because after all enemies die the timer keeps going and it takes a while for than to drop the heart
so you stand near where he drops the heart so he just leaves before you pick an option
