Search for Eevee or any of its evolutions in your Pokédex. Open the page for that pokemon and scroll down. It should have a list of all of them and the one that is just a silhouette is the one that you're missing.
This works for any pokemon that has multiple evolutions like Ralts (Gardevoir/Gallade), Cosmog, Litleo, etc.
