You can safelog which will save your dinosaur and it will not be able to be killed by others. If you just quit the game, your dinosaur stays in game for a few minutes before saving and other players can kill it in that time.
If you're on evrima version, you can safelog by pressing H to lay down then hold H to sleep (safelog) and wait for the timer to finish
