1. Personally, I like the "feel" of it, visually and logistically. Such preferences aside, generally it allows to cut down on the number of belts in one area at the cost of more complexity (eg: not being able to allow the sushi to back up, thus needing to consider overflow management)
2. As hinted in (1), this can be great in limited spaces. To make a very generic statement: anytime 2 (or more) belts run close to one another but are less than half full, one can squeeze them into one belt and save beltwork on that piece of factory (at the cost of a sink, usually, so it's not always "worth it")
3. Smart splitters and overflow filters (with a sink, somewhere, that can eat said overflow) are pretty much all that's needed to manage a sushi belt without issues. Smart splitters make sure that the belts going into the machines are all single-item belts (so they can back up) while simultaneously sending downstream any excess or unneeded/unexpected items

And yeah, a thread might be useful if you want to add images and such to the convo ^^

2. Its great for belt management, instead of having 4 belts for my manufacturers I just have 1

3. Smart splitter with overflow into sink

4. It works great with my modular blueprint where everything gets dumped into one belt.

I use all of my heavy oil resedue to turn it into fuel to power more fuel generators, 8 refineries rpduing plastic/rubber produce enough heavy oil resedue to power 4 fully overclocked fuel generators running off gasoline

I mean technically I could turn it into petroleum coke and run coal generators which would produce slightly more power, but it would require a lot more resources and space to set up 36 coal generators, when I could setup 4 fuel generators instead

It's really all down to planning everything out before you actually do any building, but I'd say for phase 2 you don't really need to stress too much about efficiency because you will end up rebuilding things at later phases anyway.

If you want to be efficient, there's plenty of planning tools like SCIM or the satisfactory tools to help you break down the production math and ensure you have the right figures for everything.
