I prefer Nidoking/Tyranitar because it gets Dragon Dance, but this is also fine because you have priority Sucker Punch + Swords Dance and better initial speed. With Sheer Force, you boost up your Crunch and Poison Jab.

dark/poison:

So steel fairy seems to be the best of these 4 with steel ghost right after but 4 weaknesses makes a bit worse.

Problem is the weaknesses are ground and fire which iirc are fairly common.

Best defensive typing depends on a lot of things. If you mean sheer number of resistances, it's actually Steel/Electric that has the most, but it also has a glaring 4x weakness to the common Ground-type. Steel/Fairy is considered by many top-players to be the best overall typing mix because it mixes one of the most strongly balanced types (Fairy) with the most strongly defensive typing (Steel), so you get the balanced offensive and defensive perks of Fairy, but with its weaknesses (Steel and Poison) removed plus all the defensive pros that Steel naturally enjoys.

Similarly, while a mon like this doesn't exist in mainline atm, Fairy/Ground is potentially just as if not more overpowered, since it combines the most strongly balanced type (Fairy) with one of the strongest offensive types (Ground), and all the things Fairy can't hit offensively (Poison, Steel, and Fire) Ground hits super-effectively. A Fairy/Ground mon has the potential to be extremely overpowered if it gets all the right tools.
