I use it all the time with my Arctis 5s and I personally think it's great. It doesn't muddy audio like footsteps and it definitely feels better to me than standard stereo does while gaming. You can also disable it in the Engine software when you're not gaming if you prefer to listen to music or watch videos or movies in standard stereo

Some people are able to tell the difference in surround sound more than others, just like some people are able to tell a bigger difference between audio resolution than others. It somewhat depends on your ears lol

Regarding the Arctis Pro Wireless Headset in particular, does Stereo Widening, such as Small room/Large Room simulation really just balance out where sound comes from when gaming? For example, if normally a sound would only play on your left ear, this stereo widening tries to synthesize how the sound waves would actually bounce around the room and get to your other ear just lesser. Am I understanding that right?
