-Dorg.lwjgl.opengl.Window.undecorated=true into your java arguments on an installation and the same result could be achieved. I tried it on 1.8 and it worked but it didn't seem to work on latest versions. any way I can make this work on 1.16?

I guess LWJGL gave up on doing custom things, it seems to just be a binding to GLFW you use directly now

So probably no properties or environment variables, GLFW isn't the kind of library that lets you do things like that behind the app's back either

You'd need to patch the client to call GLFW with the right flags

eww, GLFW doesn't have an explicit windowed fullscreen mode, they just do it if you request a fullscreen window with the same width and height as the current resolution
