So the different interfaces are known as "crests," you can see in the bottom left where it says "change crest." In the top right you can see that the one in this image is the Reaper crest, whereas the other one is the Wanderer crest. They change your basic attacks, like your upslash and dash slash, which we saw in the new trailer, and also alter the amount and type of tools you can equip.
