for people considering dark souls, i would play ds1, ds3, bloodborne, then sekiro (you can skip ds2). If you only want to play one game, make sure it's bloodborne (with the dlc!!!) the dlc of bloodborne and ds3 is fantastic

dark souls is slow and primarily about avoiding attacks, bloodborne is faster and has a greater emphasis on parrying with the introduced gun, sekrio is fast like bloodborne with an even greater emphasis on parrying/deflecting. bloodborne was the middle ground. you can dodge or parry in bloodborne, very few people parry in dark souls, and good luck making it trhough sekiro without mainly deflecting

Palace of Pain would be cool. White Palace but it has ridiculously hard and tight platforming, with a Pure Vessel attacking you from a point where you can't hit it. Honestly, I have never found Path of Pain too challenging, even when I first did it.

Don't worry. A lot of HK's difficulty comes from your brain being scared of consequences, and bs that you couldn't see. That's particularly relevant for Path of Pain. The only consequence for failure is a room reset. If you give up, you have to start from the beginning. I recommend Hiveblood 100%.
