the old light was attached to the ceiling with screws so it needed those anchors because that is just a simply drywall kind of ceiling

there was no box cover or anything for the wires

I'd expect 6 month to get accustomed with the engine's way of handling things.

Though with (proper, stable, not early access) UE5 looming on the horizon, you may have less things to worry about as a filmmaker.

Also as a filmmaker, some settings in the post process may familiar to you, including stuff like colour grading (though alternatively you can use colour LUT if you're making colour grading presets)

If anything, with Unreal, you also have to put game engine restrictions/limitations into consideration, unlike DCC tools like Blender.

At least with DCC tools for making pre-rendered sequences, you can disregard game engine limitations and expect some real life physically correct looks.
