Teaching yourself is tough, depending how you learn. By that I mean some people learn by doing, repeating tasks others can learn by reading/watching tutorials etc. Setting yourself some basic, easy to achieve goals is key imo. If the tutorials are out of date that just means you have a learning opportunity to find out what has changed in the engine and implement a fix. I tend to watch a load of different tutorials from different channels and blend together the different approaches to problems in a style that suits me.
Don't worry about credibility, it's admirable that you are concerned about that however!
