You can run poron of you want the board to sound a bit lower pitched emphasizing on the thock. Silicone will lower the mids so that would make your board muted (if you're using high pitched switches then it will mostly produce high frequency noises, vice versa for the neutral and low pitch switches)

Or you could run nothing to have that pure sound of your switch and plate

Without any acoustic modifiers

That should give you a lil idea on what you want maybe, but I would just try all 3 out and see which one you like

Is anyone familiar with magnetic sensors?

There are keyboards that can only use S-pole magnetic switches, do you think those can also use N-pole depending on the software? And vice versa.

Also, do you think there is any variation in performance or price depending on the type of sensor?

From my understanding, it’s to do with both the firmware and hardware. Wooting’s hardware supported south polarity but their firmware didn’t yet and through an update they achieved it. Boards like the Hm66, 60HE, Sayo and Raven (not fully), support both polarities despite having different sensors.
