I'm not sure because there's no way someone adding a bot wouldn't be logged in audit log even if you say it's not there so I'm not sure what else you can do about it. It's either a bot was added, it's logged.. or it wasn't a bot, it was an admin account who did it all for you so also check to see if an admin has given roles to someone else and maybe they made someone else an admin to trash the server (not a bot).

I don't give admin out to anyone in my servers. Just 1 other guy who sort of co-created the project we do together. My managers didn't even have permissions to manage roles until a few weeks ago. They've been on my team for a year. I've experienced it when an admin has trashed something I've created before when they had an argument with me
