How did you manage to make a cooked pizza look raw?
this is a picture of it before it was cooked
difference being I didn't put any more cheese on top of the pepp because there was almost 2 cups of cheese under
ok I'm done with making pizza for a while I think I got the crust recipe to where my wife and I like it and the cooking method down to where it makes it turn out just right. Now to start working on a new recipe!

It isn't chicken, it was actually, and was finished with a dill butter sauce. Tilapia seasoned with salt/pepper, sumac, and lil' chili powder added to one side. Brown and wild rice. A mix of zucchini, yellow onion, mushrooms, and dill. I made some melted butter with dill that went on the fish and veggies, but I shoulda made it more a sauce I think. And I shoulda added a lil' Turkish pepper paste to the veggies

I often do a version of a "roll-cut" for some texture and varied edges, but it's still consistent in size

Growing up around a 7-11, I don't know if they still have it but back in the day you could get "nachos" and top the chips with Chili and cheese. That inspired what I made as a late night snack. Topped with chili and cheese and chunks of roasted pork. And the chips were Nacho Cheese Doritos to make it a true fatty snack!
I can recall all the local derelicts going in there and filling big gulp containers with the chili, as there wasn't a policy stating how much chili you could take with your nachos.

When done wrong taquitos can be horrible. When done right it can be a life changing experience. Home made starting with handmade tortillas, roasted salsa and perfectly seasoned filling... Fries crispy but not overly done.
I grew up with very limited experience with real Mexican food. When I married my wife I was introduced to foods I thought I had experienced before and didn't like but didn't have authentic home made Mexican Food. Wife's family are full blown Mexican from southern Mexico. Changed my entire outlook on other culture foods

Mozzarella's always safe. Sour dough sounds good! Supposed to be healthier too, right? 
good ole cheddar, mozzarella (I have whole milk low moisture on hand) maybe melt the butter in the pan first, with some crushed garlic until it infuses the flavor into the butter, remove the garlic and then make the grilled cheese in that! May even add some Basil into the mozz inside the sandwich so when dipped in home made tomato soup made from fire roasted tomatoes.... Oh man! I need to make this now....

I literally typed out my thought process as it changed from Cheddar to reading you suggest mozzarella lol hahaha that was funny to read back. @vale kelp I've not tried something already made into ghee but if I'm not mistaken all ghee is, is clarified butter without the milk fats in it so it doesn't burn or brown as easy? I make this on my own most of the time, if its Ghee then yes I use it often lol if not then no not yet

...clarified butter, where all the milk solids are removed, but it’s cooked just a tad bit longer. Those extra couple of minutes allow the milk solids on the bottom of the pan to begin to brown, which gives ghee a slightly different, more nutty flavor profile to clarified butter.
I really enjoy the flavor it adds.

I used a combo of mixed cheeses shredded provolone, mozzarella, and parm, and american (which to me no other cheese melts the same) provides a gooey meltiness like no other.
Yummm! I have to stick to the kraft american cheese slices for now, nowhere near as fancy but they do melt great!

and IMO, the moment you move away from either American, certain Cheddars, and Havarti... it better to make it a melt because other cheeses tend to be even better when something else to balance them out
i do enjoy cheddar on sour dough
and if you willing to take the time to do it, making your own processed cheeses out of cheeses that don't melt well (like the better cheddars), you can make yourself slices of ready to melt cheese of any combo you want
and as long as you have a scale, it ain't that hard

Poolish, 300ml water, 300g manitoba flour, yeast, honey, refrigerated and fermented for 16h

One thing I follow, no matter what I am baking, is every ingredient needs to be room temp.
And oven. Grab an oven thermometer as well. 25F under and over 350F makes a big difference for cookies, or creme caramel.

THank you. Food should be pretty. The pickle is just thin sliced red cabbage, thin sliced Red Onion and sliced brussels, sitting in Rice Wine Vinegar over night (Sometimes with 1 tsp of brown sugar). YOu can toss it over anything salty or fatty, for that extra pop.
Not fully immersed, but just enough to cover all the surface area

if you ever find yourself wanting to make it and realized you ate all your pickled onions/sprouts already, you can do a quick pickle that gets about 90% of the way to the traditional hours/days+. Just slice it up how you want, bring your vinegar and splash of water, salt, sugar (and I suggest sumac) to a boil, toss the veggies in stir. Let it go for about 30-60 seconds, remove from heat and just let cool. Once it hits room temp they pretty much good to go

I initially bought it for soup, but thought I’d try something different w/ it, and I must say, the difference wasn’t significant.
It honestly isn't a cut I'd use for soup. But if you get the boneless ones, sear them like you would a steak, so good. then leftover yo uslice up and put into cold oven at about 250f for 20 and enjoy

@zealous crown OH I FORGOT. I was asked to do a beef stew thing that stew beef would been my go to for. But for some reason was like 8/lb, and boneless shortribs were 4/lb. So I took a chance. I got those, dice them up. Did a more traditional low heat braise and put it over rice and was like 3x better than stew beef
so that another way to use it
I do use it in stew! And you’re absolutely right, it makes it more flavoursome
so like in the pot with all your other stuff, add enough liquid, into a pot with a cracked lid into the oven at about 225-250f for about 2.5-3.5hrs

And also it makes the gravy a little too thick and starchy
#1 when using a crockpot or stovetop, the heat is focused on speicific areas, which means you need to stir if you want even heating and those outside bits get higher heat
#2 crockpot temps are too high actually
doing a stew like a traditional braise is more hands off and more consistent. Cracked lid, about 250f oven
2hrs is the magic number, your meat is edible and good. Then you go longer based on texture and other flavor development you want

about 20-30 before that mark, that when you check again and if it needs salt you add

best shortcut to making dishes better at home. Take an night to make a bunch of sauces (say teriyaki, yum yum, toum, spicy chili, tare), put into deli containers or squeeze bottles into the fridge. They last a month easy, and just use to spruce up last minute lazy dishes
and if you love garlic, Toum for sure
which is just aioli with a bit of lemon juice and water added

if you ever come across elephant garlic, grab it and make toum from that. It much much lighter in flavor so makes for an easier base for non-garlic heavy lovers
one clove is almost hte size of a bulb of normal garlic 😂 but isn't even as strong as the bulb
rather a whole bulb of elephant isn't as strong as more than few cloves of normal
Russian red on the other hand, one clove is like 3x as strong as bulb of your normal

also, as I learned the hard way when I was importing business... importing peppers from Turkey is annoying because they don't use a standardized naming system for most of them. It all biber. So you have to figure out what you buying by describing the dish the specific pepper is traditional in
they suck at naming their meats too. My ex when meat was in a dish was chicken or red. Not cut named, and for red not even type of animal

you take your cloves, peeled. Snip the top (get rid of that root piece). Then slice it down the center length wise, remove the green stem if there in the inside. Into a pan (probably small one unless doing a bunch of cloves), add enough oil to basically come up halfway on those slices (so not much oil) and low heat until gets golden brown, flip, once that side golden remove
takes about 20 minutes, and you also have garlic infused oil to cook whatever in
not quite as soft as a traditional (which isn't a bad thing) but the flavor there

you don't have to, but it can make it bitter

I wish I knew. Is that like beef jerky? I always assumed a special machine would be needed for drying food. Why do I have a feeling that Just Paul or Deaf Chef would know 
It is beef jerky, and i remember my mother making it at home when i was younger. I just cannot remember how... it was something like put it in the oven with low temperature and keep it there for 8 hours or smth? I dont realy want to experiment here, meat is expensive after all.

I cannot plate that well
Thank you. Back in the day when cooking shows actually showed one how to cook, I learned a lot about plating. I take a lot of pics. 10% maybe look good. I'm still amazed by some people's ability to make a simple plate look picture perfect!
Some of the easiest tips I learned:
Something fresh on top. An all brown meal will look better with something fresh on it. Try rough chopped flat leaf parsley, chiffonade basil, chopped cilantro, or thin sliced sugar peas or red pepper. They go with almost anything, but remember the fresher the better.
Contrasting colors! The sugar peas and the red pepper and in Bob Lighthouse's plate thee roasted tomato, red onion with that stark white feta and avocado. It makes the plate worthy of an IG post.
Stacking things (see pic) Sometimes stack it up, or spread it out. You spent a lot of time and love making it, show it off.
Practice with the food you make for yourself!

This is an actual souvlaki cooking device from Akrotiri which predates the 17th century BCE
I mean souvlaki isn’t really a recipe rather it’s just the Greek dish of grilled or roasted meat on a stick

Making my friends my version of spaghetti and meatballs for a celebratory meal.
Meatballs consist of a mixture of pork and local raised beef,. Fresh seasoning and Parmesan cheese, cream soaked seasoned breadcrumbs and love
I brown the meatballs and then slow simmer in a 12 hour marinara sauce for minimum 3-5 hours up to another 8-12 hours for max flavor
In the future, if you are doing that long of a simmer, no need for the breadcrumbs, they actually will work against you
Breadcrumbs are meant more for meatballs that are being served as is instead of simmered
I found without them and soaked in cream the meatball turns out dense and dry. But thanks for the input 😊

If that is the case, it likely a sign you are overcooking them during the browning stage (which is very easy to do, god knows I've done it a million times). They are there to keep them moist. When you simmer them in a sauce though you bypass that issue (unless you overcook to start). I'd stick with the breadcrumbs as long as it works for what you want. Otherwise experiment with new ways to brown them up faster so less heat gets to the center

I don’t know, looks pretty Greek to me.
I never said the food itself was Greek, it’s clearly a hamburger. It’s a burger from Greece’s largest fast food chain, a company that operates almost exclusively in Greece and a few other Balkan countries (with the weird exception of Australia)
If you want to see Souvlaki, I had PLENTY of that when I was visiting

Another meal from my trip, got this really good Greek sausage in one of the more dangerous parts of Athens. I had other Greek sausages in my trip but this first one was easily the best one
I can't post images yet, so i'll miss on that, but:
mushrooms go well with potatoes. roast on a pan and toss with some herbs (i like rosemary) and that's some good food there

you dry saute the mushrooms from cold right?
IDK the technical terms, I just put them on a pan with some oil from the refridgerator. (I guess that is from cold)
the oil is not from the refrigerator (only the mushroom)
so, ignore any fats (that means oil/butter) if you sauteeing them
put them in a pan on no heat, turn heat to medium or med-high
i don't know what i'm doing man (i'm doing what works for me)
after a couple minutes (usually within 10) they'll release their own liquid
at that point, add your fats (usually butter), any flavoring
and they'll suck them right in over the rest of the cooking time
if you start with a fat (like oil), they won't absorb as much extra flavor among other things
the other thing you can do, take out the stems first, put in a ziplock into the freezer. When that finally full, you can make a mushroom stock from those
well i've been doing it wrong over the past 3 weeks

there is very little wrong in cooking
its just a technique that can make things a bit better in some situations
Hell I still start with oil if I'm throwing mushrooms and peppers in at the same time on stovetop for a quick thign
that's a quote i'll remember.
The thing about cooking, there are a ton of little things that can actually go a long way to improving your final dish. And sometimes what you'd think is a bad technique or ingredient, can actually work out for your personal preference

also, mushrooms, amazing to finish with balsamic vinegar and a touch of sugar
like after they release their liquids, when about half that re-absorbed, throw in some balsmaic, touch sugar, maybe some herbs... soo good
also, Pickled mushrooms are Amazeballs
that's a good base recipe for pickled ones if you want an idea how to do it
