It also doesn't have maps, as it's more of a vanilla world. That is, you get to destroy things, mine for resources, etc.
You're thinking of Survival Games, basically Hunger Games adapted to Minecraft. While yes, they can be fun, I personally believe that letting people have their own fun and have to start from scratch, actually be able to mine, etc, is a more rewarding experience.
In the end it's still pretty much a Battle Royale, but the game mode is designed so that everyone starts on the same page, and everyone needs to build up their own advantage.
And as for hosting it (because Joey DM'd me about this), yeah that's more than possible. However, as I mentioned, I sort of need an approximate playercount so I can get a large enough server.
I also have some slight concern because of latency issues. That is, a US-hosted server may give people in EU/Australia significant disadvantages when it comes to ping.
So, if we have a large enough player base (let's say 10 per region), I might be able to look at bringing up one server in each of the three major regions. Note that these regions can't play with each other because technical limitations, but it would allow some more fairness when it comes to latency. This idea would work best if we have multiple timezone-coordinated game nights across the globe.
UHC is pretty much survival with the following rules:
- Death is permanent. You die, you're gone.
- No natural regeneration of health.
- Regeneration potions are banned, as are strength potions (though this is adjustable)
- Last player standing or the first person to collect the dragon egg wins.
- Combat logging counts as a death
- Being disconnected over 5 minutes counts as a death.
- Max game area is 10,000 x 10,000 blocks
- Game is free-for-all, but I won't say no to player alliances.
If we do this, this event will be offset from game night start by about 30 minutes (give players time to join). At the 30 minute mark, server will lock and UHC begins. Game goes until one person is left alive.
Depending on the specifics of the game, it can go for a very long time, but 2-3 hours seems to be the norm.
We could also do sort of a hybrid where we can integrate UHC gameplay with a more hunger games-like experience. That is, have a Game Host messing with things, putting down traps/rewards. I do fear that could become too unfair too quickly. We could also always, yeah, just do a SG map with everyone in hardcore adventure mode (though, again, as mentioned above, I'm personally not a fan as it becomes all luck and you lose two of the most important parts of Minecraft: the mining and the crafting.)
I suppose it would also be possible to make a hybrid experience with the SG maps, where users need the appropriate tools (pick, shovel, axe, etc.) to make map changes. This is a really good way to break the map, though.
Lots of options here. Plain UHC or an SG map would be the simplest and easiest to run, though. Anything else would require quite a bit of time, effort, and in some cases development work.

I fully intend on getting off my Omnath deck, it's working well enough for me to work out what I'm doing.
I did play a different deck last night that played OK.
I'm going to stick with mono colours for a small time just to make sure I got a good understanding, I don't wanna complicate things for myself just yet.
I'm really enjoying playing, a ridiculous amount more than I thought I would. It's definitely a game I want to get good at and continue playing.
