I don't think there's anything they make that you can't make faster. The most annoying thing to make is frigate fuel since you can't automate tritium or di-hydrogen....but you can buy it. and with a sufficiently upgraded freighter and frigates they'll consume almost nothing. Having a station or two pinned where you can quickly buy that stuff helps.

something like this where the center of one planet is inside is much "safer" in terms that you can fall for a few minutes, spin around the gravitational center and then jump back up somewhere

also if one's just a dead planet, since the gravity's priority goes to the higher gravity one more when they mix
