By the way, are you new to NMS? The quick menu has numerous purposes. You can set key binds for summoning starships, using your torch, summoning creature companions and recharging things in your inventory (such as hazard protection) without a click of the mouse

You can also swap starships on planets there as well as switching multi tools

That is a very broad question as freighters are used for almost anything. I typically use mine for exploration, as well as easy scanning and uploading of system and planet discoveries. bases can be built on them as well.
