During the purchase, you have a chance to transfer cargo side-by-side. Don't overlook that one-time opportunity!
The base will transfer over unchanged, no worries.
However, you may want to package up your freighter tech to install in the new one. Do Matter Beam last, after accessing your freighter's storage for manual moving or consolidation (in case the new freighter has less storage, this is really important).

If they show the freighter symbol on the screen, they can be boarded and purchased. Note that if you use the scanner in their landing bay, you see their stats, so you don't have to go all the way to the control deck and talk to the captain.

All inhabited systems have boardable freighters, but you want tier 3 (3 star) economies and maybe tier 1 (1 star) conflict systems for best results. I think economy will improve class, and conflict may improve numbers (not sure about the latter).

Are you doing the free freighter defense missions? Every five space warps that recurs, and after the first one or two you start defending large and sometimes better class freighters. I thought you were just looking for system freighters, in which case you can just keep trying until you get an S-class encounter.

The current redux expedition runs will end mid January so that is the earliest point a new update or expedition could arrive. So it is wise to do all you can to prepare before then. If no update or anything happens mid-January then any extra time will just be a bonus to do more and get more things done. But it's a good idea to be as prepared as possible for new updates.

You can change that in the difficulty settings, you can have permadeath with resources stacking to 9,999. Though that will technically change it to "custom" difficulty...that only matters if you are going for the achievements for reaching the center in permadeath and survival. If you need the achievements then forget everything else and focus on getting them done first so you can play how you want or if you already got them then you don't have to care anymore and just play how you like.

You can back up your save files before testing too so if something unfortunate happens when testing multiplayer you can recover your save file.

start a Normal mode save, stick to objectives of the tutorial stage mission Awakenings, read the tooltips displayed in bottom right corner

don't wander off, follow the objectives till you reach place called Space Anomaly (you'll know)

after that you can do whatever you want, but recommended to still stick with main quest line to learn more what the game offers

Piracy is good too, to start with. Lots of cash to be made for relatively low effort.
