Once both of you unlock the anomaly you can ignore the story/work on it solo and just hang and explore together to your hearts content

First missions are the only ones that can softlock your save if bugged while doing them with someone

Which would mean a new save...

It's generally best to avoid doing quests in MP yeah, as it can cause bugs, and yeah to echo others it's best if you both get to space anomaly independently, then play together

echo locators will spawn multiple types of sentinel ship, if you just want interceptors it's quicker to farm ai carrier fragments

Not sure how confident you are in space combat, but if you kill enough sentinel interceptors (the sentinel ships that come after you) as well as the Sentinel freighter/flagship/whatever you'll get an item that will specifically lead you to a crashed sentinel ship
