Depends on what you want out of it. If you are looking for the two best roes, then there is lava eel and blobfish. Lava eel roe is worth more, but blobfish produces 40% to 50% more roe, so it's actually better.
Tied for third are sturgeon and ice pip. Ice pip is good for frozen geode drops, octopus for omni geode drops, while the aforementioned lava eels drop magma geodes. Just don't expect too much from any of them.
Finally ingredients fish are good. Sea cucumbers are used to make Lucky Lunches. Sardines are good for Dish o'the Sea. And if you are feeling ambitious, flounder, midnight carp and one of the two squids are good for Seafoam Pudding.

But you won't get rich off of fish ponds. Forget about that.
