Hmm… really depends on the gems.
The gems have a variety of uses, a lot of NPCs like being gifted them and specific NPCs love certain/all gems. It isn’t at all a bad idea to just sell them now for the cash though.
The geode minerals are… less useful. Not useless mind you, and there is one NPC who likes being gifted them, but selling them really isn’t a bad idea since NPCs don’t like request them at the “Help Wanted” post anyways or anything. Can be cool to collect them if you enjoy that though.

There are also a couple of NPCs who like being gifted the dwarf scrolls, you can probably guess one of them without me telling you (not much else you can do with them anyways). Quartz is another item which a significant amount of NPCs like (though a lot also dislike it so you have to tread carefully)
Ima just be honest with you, you don’t need anywhere near that many frozen tears or amythests, and can probably sell some of the diamonds as well.
